Partner Spotlight: Cutting Hill Beef

Dorchester Food Co-op is a new community-owned store with a mission of bringing the community together and providing easily accessible healthy food options. With the store's recent opening, the Co-op is excited to provide you with fresh, organic produce, meats, vegan options and more. We take our responsibility as a hub for healthy and sustainable living seriously, and we have carefully selected all of the products that you will see when you step inside the store.

One of the brands we’re thrilled to be partnering with is Cutting Hill Beef. This is one of our favorite farms and we’re glad to be able to bring DFC shoppers farm fresh beef that is far and away superior in quality, and also supports the local economy.

Behind Cutting Hill Beef Company: Regenerative Farming

Cutting Hill Beef Company provides sustainable meat by transforming New England’s agricultural practices. Their mission is to use regenerative farming that takes care of the land and ensures the finest quality products. The story began when Caroline and Ramsey rented a couple of barns in Northeast Kingdom in Vermont and committed to learning about dairy farming. Then in 2016, they purchased a farm, as their passion for sustainable and ethical agriculture grew. They diversified into beef, pork, and egg farming. Now, Caroline and Ramsey offer humanely raised and sustainable products.

Cutting Hill Cattle

All of Cutting Hill’s cattle are certified organic which means that the cows and everything they are fed are grown without the use of chemical fertilizers, pesticides, or other artificial agents. Caroline and Ramsey say, “Cows are ruminant animals, and their natural instinct is to roam and graze. We use regenerative grazing practices to ensure they are able to consume as much grass on pasture as possible during the growing season. All of our cattle are born and raised here on our farm.”

Cutting Hill Pigs

In addition to the certified organic cattle, Cutting Hill also raises pigs. Caroline and Ramsey explain, “We raise heritage pigs as their genetics and rich flavor, harkening back to the traditional breeds that have been cherished for generations. These breeds thrive in the outdoors, exhibiting natural behaviors and foraging on a diverse diet of grass, roots, and fallen fruits. Their natural grazing and rooting behaviors help to regenerate the soil, fostering a healthier ecosystem and reducing our environmental impact. The result is pork that boasts exceptional taste and tenderness.”

Cutting Hill Beef Company Products at DFC

Customers will be able to purchase individual cuts of beef Dorchester Food Co-op, as well as order whole sides of beef for pre-order. Ordering a side of beef means you purchase half of the cow and we butcher it and package it up for you.. This is a cost-effective way to stock your freezer one time and have beef whenever you want it. A side of beef is generally around 200-220 pounds of meat. We also see friends or neighbors ordering a side of beef together and splitting it up to share it, if it will be too much for one household.

It’s one of the most economical ways to purchase quantities of beef, ensures you know exactly where all your meat is coming from (and in fact literally the exact cow), and supports a local, family-owned farm. This can be a great option if you have a large freezer, and we’re excited to offer this to the community! Just ask at the store about ordering a side of beef, if you’re interested. We’ll also provide more information on our website once orders are open.

We will also have a selection of beef and pork premium cuts, depending on what’s available from the farm at the time, including ground beef, ribs, ground pork, beef or pork roast, steak, pork chops, sausage links, and breakfast sausage. Sizes vary depending on the selection, and cuts are packaged for easy thawing to make quick meals.

And when you shop Cutting Hill products at DFC, you are also supporting regenerative farming in New England, a sustainable practice we should all get behind.
